Dan ("Klecko") talked about the book 6000 Years of Bread (available at the Saint Paul Public Library).
Dan talked about some of the breads made at the Saint Agnes Baking Company.
The harvest bread is made with craisins, sunflower seeds, honey, apple, cinnamon, and raisins (the apple adds hydration to the dough).
Breads with higher hydration are baked at lower temps. Regular at 400; burger buns at 350.
Dan mentioned the American Institute of Baking, Manhatten, Kansas, as a major center of knowledge about bread baking.
Dan mentioned a couple more books about bread baking.
A bialy is like a bagel without a hole that has a savory filling (onion).
Dan mentioned a way to get people to want things even if they don't think they want or need them: "Appeal to the emotional instead of the rational."
Dan said that there were 5200 bread entries at 2002 Minnesota State Fair.
Dan said that he was going to be at the 2003 Minnesota State Fair Aug. 25 in The Creative Activities Building.
